For Pratik , wine begins long before it reaches the glass. His approach is rooted in curiosity a desire to understand the people, places, traditions and philosophies behind every bottle.
At Fitour, he has created a deliberately focused wine program of 30 labels, each personally tasted and selected, favouring wines with a strong sense of place and personality over familiarity or volume.
A Certified Sommelier from the Court of Master Sommeliers, alongside a Master's in Europe that deepened his understanding of hospitality as both a business and an experience.
At Fitour, he sees his role as one of translation: making the depth and complexity of wine accessible while using it as another layer of the restaurant’s storytelling.
Shrineet Sonsurkar
Head Mixologist
Shrineet Sonsurkar approaches bartending with curiosity, experimentation and an instinct to question what is already possible.
At Fitour, as Head Mixologist, he works alongside Chef Ashwin Singh to translate the restaurant’s ideas into cocktails, drawing on ingredients, techniques, memories and stories to create drinks that become an extension of the dining experience.
His process begins with a simple question why not? and develops through research, experimentation and refinement, while remaining grounded in technique, precision, balance and an understanding of the guest.
For Shrineet, experimentation is not about being different for its own sake, but about understanding the fundamentals deeply enough to discover what else they can become.
